Tradition, explained
Sattu and gond katira have been in Indian kitchens far longer than any of us.
Sattu is roasted gram flour, mixed into drinks and dough across northern India for generations because it is cheap, filling, and travels well. Gond katira is a plant derived edible gum traditionally folded into rich homemade preparations, especially in colder months.
Nothing here is new. What is new is that we can now name what these foods contribute — plant protein, fiber, iron, magnesium, healthy fats — and say it plainly on a page.

How to enjoy
Room temperature, one at a time.
Straight from the box with chai or coffee. Warm one for ten seconds if it has been in the fridge — the ghee softens and the cardamom comes back. Prasi’s daughters eat them cold. She does not.
Storage
Airtight, out of the sun.
Keeps about two weeks at room temperature in a sealed container, or six weeks refrigerated. There are no preservatives in the box, which is the point.

Less than most Indian sweets. Dates carry a good part of the sweetness and the jaggery is there to bring the flavors together rather than dominate. It is still a sweetened food — jaggery is an added sugar.
