Makhana was a festival food long before it was a health food.

Fox nuts have been harvested from ponds in eastern India for centuries, roasted in ghee, salted, and eaten by the handful. Gond katira is a plant derived pantry ingredient used in Indian preparations, particularly ones associated with rest and recovery.

Prasi makes this laddoo the way it was made at home — roasted until light, ground with nuts and sesame, sweetened just enough with misri.

How to enjoy

Any time of day.

Lighter than the sattu laddoo, so it works in the afternoon or late at night without sitting heavy. Good with warm milk, which is how Prasi’s mother served it.

Storage

Airtight, out of the sun.

Keeps about two weeks at room temperature in a sealed container, or six weeks refrigerated. Makhana softens with humidity, so keep the lid on.
